Gluten-free flatbreads

These are not pretending to be naan. They are soft, scoopable and sturdy enough for a generous spoonful of dal.

Method

  1. Mix the flour, baking powder and salt. Add the yoghurt and oil and bring together into a soft dough.

  2. Rest for 10 minutes, then divide into six pieces.

  3. Roll each piece between sheets of baking paper to roughly 3mm thick.

  4. Cook in a hot dry frying pan for 90 seconds on each side, until browned in spots and cooked through.

  5. Brush lightly with butter or garlic oil and keep wrapped in a clean tea towel.

Use certified gluten-free flour and baking powder, and clean equipment if cross-contamination matters.
